Tres Quesos

This is a recipe that my mother-in-law and I invented. We decided to call it "tres quesos" because it has 3 cheeses and it sounded cooler than anything else we could come up with. So, give it a try! It's pretty easy and you don't have to be precise about stuff - I just kind of guessed at how much I used of the ingredients. Good luck!

1 box pasta (I like to use rotini or penne rigate)
1 lb. ground turkey (or ground beef - whichever you prefer)
1/2 an onion, diced
as much zucchini as you want, diced
1 jar spaghetti sauce (use chunky vegetable if you can find it)
2 cups shredded mozzerella
1 cup shredded longhorn or use parmesan, or both!
1 pint small curd cottage cheese

1. set the water on to boil for the pasta
2. brown the turkey meat. make sure to add salt, pepper, garlic powder and basil while you cook it. your pasta water should be boiling by now, so put in your noodles. make sure they don't get too soft!!! or else they will get mushy when you put the casserole in the oven! eww...
3. saute the zucchini and onion in a little olive oil and salt
4. once the pasta, meat and zucchini are all ready, mix everything (except the 1 c. longhorn cheese) in a very large bowl. pour the mixture into a 9x13 dish and sprinkle on the longhorn cheese.
5. bake at 350 degrees for about 20 minutes or until the cheese on top is nice and melty and the casserole is bubbling.
6. let it cool for 5-10 min. before serving
